We promised a month of Spain, and no month of Spain would be any good without a visit to Madrid now would it? Madrid, the vibrant capital of Spain, is known for its rich history, stunning architecture, and lively atmosphere. A visit to the bustling Mercado de San Miguel offers a glimpse into the city's culinary diversity.
Cocido Madrileño is a traditional chickpea-based stew featuring various meats, sausages, and vegetables. It’s a hearty dish that perfectly captures the essence of Madrid’s robust cuisine.
While Cocido Madrileño is traditionally made over several hours, the Thermomix can help streamline the process, making it perfect for a campervan or home kitchen.
Ingredients:
- 200g chickpeas, soaked overnight
- 200g beef shank
- 100g chorizo sausage
- 1 ham bone
- 1 potato, peeled and diced
- 1 carrot, peeled and diced
- 1 onion, quartered
- 1 clove garlic
- 1 bay leaf
- Salt and pepper to taste
- 1.5 litres water
Instructions:

Prepare the Base:
- Add the onion and garlic to the Thermomix bowl. Chop for 5 seconds on Speed 5.
- Add a splash of olive oil and sauté for 5 minutes at 120°C on Speed 1.

Cook the Meat and Vegetables:
- Add the beef shank, chorizo, ham bone, chickpeas, potato, carrot, bay leaf, salt, pepper, and water to the bowl.
- Cook for 60 minutes at 100°C on Reverse Speed 1.

Serve:
- Remove the ham bone before serving.
- Serve the cocido hot, with a side of crusty bread.
